Do you remember that moment from the movie *Ratatouille*? The stern critic takes a single bite and, in an instant, finds himself back in his mother’s kitchen. At ARTE Restaurant in Svätý Jur, we’ve decided to take you on a little journey back in time this summer during our fine dining dinner.

Can one of the courses on a fine-dining menu be based on something as familiar as bread with butter and honey? Chef Patrik Andrejčák believes so. “When we were kids and couldn’t find anything sweet in the kitchen cabinet, bread with honey was a lifesaver,” he recalls.

Today, this “emergency snack” is transformed by him into a meticulously crafted dessert. From the very first bite, you’ll taste chamomile parfait, fermented pollen, and a sauce made from roasted yeast. It’s complemented by a steamed cake with lemon jam. It’s not just a dessert. It’s an attempt to capture the sense of security we felt as children, sitting in the kitchen with honey-stained fingers. Proof that the most sincere flavors are sometimes hidden in our own past.

Diana’s Chicken Breasts: A Modern Take

In the past, Diana chicken breasts were a staple at many weddings and celebrations. At ARTE this summer, however, you won’t recognize them at first glance. “It’s our interactive game—guests gradually discover familiar flavors in a completely new, modern texture. It’s a dialogue between what was ‘then’ and what is ‘now,’” adds Patrik Andrejčák.

Iberico, cherries, and 42 days of curing

Summer is also reflected in the menu through the flavors of the grill. Patrik Andrejčák, however, bases his dishes on precise preparation of aged meat and seasonal fruit.

One of the main courses is 42-day-aged meat from an Iberian piglet. Thanks to the animals’ free range in orchards and a diet consisting of acorns, the marbling of this meat is more reminiscent of exclusive Wagyu beef.

“We prepare it like a steak: we grill one half and serve it with just salt, while we glaze the other half with cherry syrup, coat it in amaranth, and serve it with cherry ketchup,” explains Patrik Andrejčák.

The Story of the Almond Tree

However, there are also stories that remain unchanged over time. Among them, at the fine dining restaurant at Pálffy Castle, is the taste of of almonds. If you look out the window at ARTE, you’ll see an almond tree that has been growing here for years and has become part of this place’s identity. It is this very tree that inspired the restaurant’s signature dessert. It embodies the DNA of the entire castle complex—constancy, integrity, and authenticity.

“We want to work with flavors that feel familiar and comforting. For us personally, they remind us of where we come from and who we used to be. I believe we can convey this feeling to our guests as well,” says Patrik Andrejčák.

The dinner consists of 9 courses and begins at 6:00 p.m. You’ll enjoy the first bite along with a welcome drink in the lounge; starting with the second course, the meal is served in the restaurant.
